Paratha or Lachha means layers. A lachha paratha an all-time favourite amongst Paratha lovers and as the name suggests is a flaky, crispy paratha in layers, mostly used in rolls or served with North Indian gravy dishes.

For the Aloo Sabzi
Begin by placing a non-stick pan on fire with 1 tsp ghee/ vegetable oil in it.
Once the oil is hot, place the Keventer Lachha Paratha on the Pan and cook for 2 minutes
Turn over the paratha in between and fry evenly on both sides pressing gently with a spatula till the parathas are well-cooked on both sides and appear golden brown. It’s best to fry 1 paratha at a time.
To enhance the taste of the parathas, add butter on top before serving.
To prepare the aloo ki sabzi, heat another low bottom pan with vegetable oil.
Add in the cumin seeds and potato slices, salt and saute on medium flame.
Add the dry spices with the potatoes and mix well, Sprinkle some water if you don’t want it to be completely dry.
Cover and Cook for 10 mins on low flame till the potatoes soften and garnish with coriander leaves and lemon wedges. The simple aloo ki sabzi is ready to be served with delicious Keventer Lachha Parathas.
