Bangali’s Forever Romance with ‘Doodh Cha’

Bangali’s Forever Romance with ‘Doodh Cha’ – Keventer

"Aaaah! Cha ta kheye ektu shanti pelam (I've finally found some peace after drinking this tea)," Subhankar Biswas heaves a sigh of relief. He had been taking a short evening break from work at the roadside tea-stall below his office building, with his colleague. As he expresses his satisfaction at having drunk his favourite beverage, his colleague nods in approval, "Doodh Cha ta kintu ekhane fatafati banaye (The milk tea here is truly awesome)!"

The quintessential Bengali, or let's say, 'Bangali', holds an indomitable love for the 'Doodh Cha' or milk tea. Though the more sophisticated part of this emotional, poetic, and intellectual section of the society would show its preference for the Darjeeling Tea brewed at the perfect temperature and served unadulterated by milk or sugar, the majority of this culture would swear by the thick, milky concoction to be their first love.

Once the sun rises in the east, the Bangali needs his or her cup of favourite tea to rise up from bed and prepare for the grueling day ahead. The Doodh Cha is an inevitable part of the Bangali's mornings. However, that's not all. Chai breaks are those little moments that keeps the Bangali up and running throughout the day. Like drops of elixir, the Doodh Cha keeps the Bangali motivated and assiduous!

And the Bangali picks up this love for the milk tea, young. It begins with long hours spent in the canteen with friends for 'adda', perhaps with some guitar-strumming of popular Bengali songs, and evolves into those chit-chats with like-minded people in a roadside shanty during breaks at work. Without the Doodh Cha, the newspaper in the morning doesn't read that interesting. Nor do those post office debates, on political issues, with 'para' friends, have enough fire. The evening get-togethers don't seem warm enough and lone moments spent listening to Kishore Kumar or Hemanta Mukhopadhyay lack emotion.

But what really makes this Doodh Cha Bangali's forever mate?

Interestingly enough, it is not just tea leaves that add flavour to this daily delight, but also the quality of milk used to prepare it. The richer and thicker the milk, the more delicious the concoction. Additional flavouring may be done by adding sugar to taste, and some basic condiments like ginger (Ada Cha), cardamom (Elaichi Cha), or spices such as clove, pepper, and cinnamon (Masala Cha). However, the milk remains the most vital ingredient of the Doodh Cha (Err... that is exactly why it is known as the Milk Tea).

Achieving perfection in making this delight at home is no mean task at all. All you need is some CTC tea and Keventer Metro Rich Milk. Heat the milk in a pan till it bubbles, add some sugar to taste, and add some tea. Switch the gas off and let the tea brew in the milk. Pour it through a strainer and enjoy with some biscuits, 'pakodas', or chops.
